As a child, the best time of the year was the crisp fall air, the leaves were falling, and you were jumping into those big piles! We always had a Thanksgiving weekend apple cider work bee. Several families would get together and crush apples to make bottles and more bottles of apple juice. Apple harvest is Fall!
You can select any shape you want, you can pick a muffin tin or silicone. You can have fun with the shapes like I did, those paws are a big hit! In this case, I kept the muffins soft. They must be stored in the fridge in an airtight container, they will last about 2 weeks (IF they don’t get eaten first 🙂 )
Applesauce Oatmeal Pupcakes
Equipment
- 1 Baking Tin
- 1 Silicone Mold
- 1 Mixer
- 1 Silicone spatula
- 1 Measuring cups
- 1 Measuring Spools
Ingredients
- 1/2 cup Oat Flour
- 1 tsp Baking Powder
- 1/2 cup Rolled Oats
- 2 tbsp Olive Oil
- 1/3 cup Unsweetened Applesauce
- 1 tbsp Honey optional
- 1 Egg
Instructions
- Preheat oven to 350° f. Line 12 – 14 1.75-inch mini-muffin pan with paper bake cups and set aside
- In small bowl mix together, flour, baking powder and oats. Set aside
- In a large mixing bowl add olive oil, applesauce, honey and egg. Beat on medium speed about 2 minutes or until combined
- Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed
- Fill each cupcake liner with 1 tablespoon of pupcake mix
- Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean
- Remove from pan and cool on wire rack
